Plum Clafouti

Well Fall has finally arrived and I am sure most of us are
thankful for that.    It has been a long hot summer.

I plan on making this wonderful recipe for 
dessert tonight and thought I would share it.

Italian Prune Plums are in season right now and are so delicious.   I remember my Mother
making Plum Dumplings with them.  







Plum Clafouti

6 tablespoons white sugar, divided
14 Italian prune plums, halved and pitted
3 eggs
1 1/3 cup milk
2/3 cups all purpose flour
1 1/2 teaspoon grated lemon zest
2 teaspoons vanilla
1 pinch of salt
1/2 teaspoon ground cinnamon
2 tablespoons confectioner's sugar

Preheat oven to 375°    Butter a 10" pie plate, and sprinkle with 1 tablespoon of sugar over the bottom

Arrange the plum halves, cut side down, so that they cover the entire bottom of the pie plate.  Sprinkle with 2 tablespoons of sugar over the top of the plums.   In a blender, combine the remaining 3 tablespoons of sugar, eggs, milk,  flour, lemon zest, cinnamon, vanilla and salt.    Process until smooth, about 2 minutes.   Pour over the fruit in the pan.

Bake for 50- 60 minutes in the preheated oven, or until firm and lightly browned.  
 Let stand 5 minutes before slicing.

Dust with confectioners sugar before serving.

All Day Apple Butter

Apple Butter anyone?      

You will need

5 1/2 lbs apples, peeled and finely chopped
4 cups sugar
2 to 3 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Place apples in a 3 quart cooker.    Combine sugar, cinnamon, clover and salt; pour over apples and mix well.    Cover and cook on high for 1 hour.

REduce heat to low; cover and cook for 9-11 hours or until thickened and dark brown, stirring occasionally (stir more frequently as it thickens to prevent sticking).

Uncover and cook on low 1 hour longer.   If desired, stir with a wire whisk until smooth.   Spoon into freezer containers, leaving 1/2 inch headspace.    Cover and refrigerate or freeze.

Yield:  4 pints.

Awesome Country Apple Fritter Bread




A bit of work, but SO worth it !






Awesome Country Apple Fritter Bread

Bread loaf
1/3 cup light brown sugar
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
 1 1/2 teaspoon vanilla
1 /12 cups all purpose flour
1 3/4 teaspoon baking powder
1/2 cup milk or almond milk

Apple Mixture
2 apples, peeled and shipped (any baking apple will do) 
 2 tablespoons granulated sugar 
 teaspoon cinnamon
1/2 cup chopped walnuts - optional




Old-Fashioned Creme Glaze
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream - (depending on thickness of glaze wanted)



Preheat oven to 350°.   Use a 9x5 inch loaf pan and spray with nonstick spray or line with foil and spray with nonstick spray to get out easily for slicing.

Mix brown sugar and cinnamon together in a bowl, set aside.
In another medium sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.    
Beat in eggs one at a time, until blended in.    Add in vanilla extract.
Combine and whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended  Mix milk into batter until smooth.

Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.    Lightly pat apple mixture into batter.  Repeat with remaining ingredients.    Swirl brown sugar mixture through apples using knife of spoon.

Bake in preheat oven until toothpick inserted in the center of the loaf comes out clean.   Approximately 50-60 minutes.

To make glaze,  mix powdered sugar and milk or cream together until well mixed.   Let bread cool about 15 minutes, then drizzle with glaze.

Apple Crisp

The end of summer means local apples are available.    One of my favorite recipes is 

Apple Crisp !   This is a very easy recipe to double for a large group.





Apple Crisp

In a buttered 9 X 9 square pan, place 6 large fresh apples, peeled,  cored and sliced.   Sprinkle with cinnamon. 

Then mix together the following ingredients with a fork and sprinkle over the apples.
1 cup flour
1 teaspoon baking powder
1 unbeaten egg
1 cup sugar
3/4 teaspoon salt

Evenly sprinkle the mixture over the apples.   Then melt 1/3 cup butter and pour over all.  

Bake at 350° for  30-35 minutes or until topping is nicely browned.
