Pork Chops with Apple Cider Glaze

We love to cook with fresh herbs, especially Rosemary.  

Fall is soon approaching and fresh apple cider will be available too.   :)



Pork Chops with Apple Cider Glaze

6 boneless center-cut pork chops
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter 3 cloves garlic, minced
1/4 cup apple cider vinegar
2 cups apple cider
1 teaspoon Dijon mustard
1 teaspoon minced rosemary
1 pinch red pepper flakes

Season pork chops with salt and pepper.

Heat oil and butter in heavy skillet over medium-high heat.   Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 - 7 minutes per side.
An instant read thermometer inserted into the center should read at least 145°   
Remove pan from the heat; transfer pork chops to a plate.

Stir garlic into the pan and place over medium high heat, cook and stir for 30 seconds.   Pour in vinegar and scrape up any browned bits from the bottom of the pan.   Add apple cider and Dijon mustard, bring mixture to a boil and cook until sauce is reduced and thick, 3 -4 minutes.   Stir in rosemary and red pepper flakes; season with salt and black pepper to taste.

Return pork chops to the pan to warm slightly, 1 -2 minutes per side.

Apple Pear Puff Pancake Recipe



This would be a wonderful dessert or something special for those 
fall breakfasts


Apple Pear Puff Pancake


3 tablespoons butter
4 large eggs
 1 cups milk
1 cup all purpose flour
1 tablespoon sugar
1/8 teaspoon ground  nutmeg

TOPPING
3 tablespoons butter
3 medium apples, sliced
3 medium pears, sliced
3 tablespoons sugar
Maple syrup


Preheat oven to 425°    Place butter in a 10: ovenproof skillet; heat in over 2-3 minutes or until butter is melted.   Tilt pan to coat evenly with butter

Place eggs, milk, flour, sugar and nutmeg in a blender; cover and process until smooth  Pour into hot skillet.   bake 17-20 minutes or until puffed and browned.

Meanwhile, for topping, beat butter in a large skillet over medium heat.   Add apples, pears and sugar; cook 12-15 minutes or until fruit is tender, stirring occasionally.

Remove pancake from oven; fill with fruit mixture and serve immediately.   If desired, serve with syrup.

Homemade Pumpkin Butter










Homemade Pumpkin Butter

1 (29 ounce ) can of pumpkin puree or solid pack pumpkin (not pie filling)
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 cup pure apple juice, no sugar added or apple cider
2 teaspoons cinnamon
1 teaspoon ground ginger
3/4 teaspoon freshly grated whole nutmeg
1/2 teaspoon ground cloves
2 teaspoons freshly squeezed lemon juice

In a large glass heatproof and microwaveable safe bowl, combine all ingredients with the exception of the lemon juice.   Cover with a loose covering that is microwaveable safe such as a sheet of wax paper or paper towel.

Cook on high power for 6 minutes; stir.  Cook an additional 6 minutes;, stir.    Cook for an additional 3 minutes; stir.

Carefully remove hot bowl from microwave using oven mitts for protection.    Carefully remove loose cover and stir in lemon juice.

Cool completely.   Cover airtight and store in refrigerator.

Dog Days of Summer

I have heard the term "dog days of summer" all my life, but being a city raised girl never really understood the term.  I know my mom and dad, both country raised, used the term every year, usually in August, but that was all I really knew.  So, I decided to actually look it up and check out the meaning. 

The American weather and farming annual 'The Old Farmers Almanac' tells us that the phrase 'dog days' has nothing to do with dogs laying around in the heat.  In actuality the phrase refers to the hot, sultry days of late summer that the most uncomfortable.  This time usually falls anywhere between July 3rd and August 11th of the calendar year.  The dates of 'dog days' coincide with the heliacal rising of Sirius, the dog star, in the constellation Canis Major...hence the 'dog' reference 

Since most of us are either getting ready to come out of  the 'dog days' of summer, or already are, why don't we take a look at a few creations by the Folkart and Primitives team on Etsy that remind us of the cooler weather just around the corner.

Grilled Zucchini with Herb Butter



Do you have an overabundance of zucchini?   

Here is a quick and healthy recipe which I make often.





Grilled zucchini with Herb Butter






2 medium zucchini halved lengthwise.


 Heat a grill pan over medium -high heat.  Coat pan with cooking spray.   Add zucchini and cook 4-5 minutes on each side.

Place 2 1/2 teaspoon olive oil and 2 teaspoons unsalted butter in a microwave-safe bowl.  Microwave at HIGH for 20 seconds or until butter melts.  Stir in 1 tablespoon chopped fresh flat leaf parsley, 1 tablespoon chopped fresh chives, 1 tablespoon chopped fresh basil, 1 tablespoon fresh lemon juice, kosher salt and black pepper.  

 Drizzle butter mixture evenly over zucchini, top with freshly grated parmesan or romano cheese.

Zucchini Parmesan Crisps











Zucchini Parmesan Crisps

Cooking spray
2 medium zucchini (about 1 pound total)
1 Tablespoon olive oil
1/4 cup freshly grated Parmesan 
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
Freshly ground black pepper

Preheat the oven to 450.   Coat a baking sheet with cooking spray
Slice the zucchini into 1/4" thick rounds.   In a medium bowl, toss the zucchini with the oil.   In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper.   Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.
Bake the zucchini rounds until browned and crisp, 25-30 minutes.   
Remove with spatula, serve immediately.
